We are always looking to develop additional facilities to produce aquaculture products. The ability to re-use water from fish production in the irrigation of conventional row and tree crops, offers an excellent opportunity for existing farms to diversify. اساس اين روش همانند روش گرمايش دي الکتريک مي باشد. بدين صورت وقتي که يک جريان الکتريکي از داخل ماده اي عبور نمايد سبب گرم شدن آن ماده مي شود. که از طريق قرار دادن فرآورده هاي دريايي منجمد در بين دو صفحه فلزي و عبور جريان از ميان آنها اين فرآورده ها را انجمادزدايي مي نمايند.سرعت اين روش حدود دو تا سه برابر انجمادزدايي در آب و يا هوا است که محصول در مدت 20- 15 دقيقه گرم مي شود ولي براي ماهي کامل يا محصولات غيرمنظم توصيه نمي شود.
ماهيان کم ارزشي که در بازار قيمت خوبي را به دست نمي آورند مي توانند براي توليد فرآورده هاي خميري استفاده شوند.
از ميان فرآورده هاي خميري برجسته، نيز فرآورده هاي خميري شده مختصر و ... [کامابوکو] قديمي ترين فرآورده سنتي شيلاتي و غذاي دريايي محبوب در ژاپن است.آن در ژاپن و کشورهاي شرق آسيا به صورت تجاري توليد شده است. منشاء محصول کامابوکو در تاريخ ژاپن بسيار وسيع است. انواع بسياري از کامابوکو در طي زمان توسعه داده شده بود. آنها براساس، روش حرارت دادن، شکل و اجزاء تشکيل دهنده متفاوت هستند.

۱- در قزل آلای رنگین کمان تخمکها در دو زمان پائیز و بهار رسیده می شوند ولی در اکثر ماهیان کاتادروموس ، تمام تخمکهای تخمدان با هم رسیده و خارج می شوند .
۲- وظیفه فولیکول تغذیه تخمک در حال نمو است .
۳- عمل Vitellogenesis در مرحله 4 شروع ودر مرحله 7 خاتمه می یابد در این زمان ماهی نیاز به پروتئین زیاد دارد ، در این مرحله تخمک به خواب می رود و اگر شرایط مساعد نباشد ، باعث فساد تخمک و بسته شدن مجرای تخم بر و در اصطلاح آتروفی می شود .
۴-پیرامونی شدن هستک در مرحله 6 نشان دهنده این است که تخمدان توسعه و بلوغ یافته است .
۵- GTH شامل دو هورمون گنادوتروپین است : 1 – هورمون زرده ساز که عمل Vitellogenesis را در اووسیتهای نابالغ تحریک کرده و معادل LH انسانی است 2 – هورمون رسیدن تخمها که بلوغ اووسیتها و پدیده Steroidogenesis (پیدایش هورمونهای استروئیدی ) را تحریک کرده و معادل FSH انسانی است .

در تير ماه سال جاري خبر توليد بستني ماهي به شكل هاي مختلف در جرايد منتشر شد . بعضي از روزنامه ها نوشتند " بستني ماهي توليد شد " ( 1) و بعضي ديگر عنوان كردند كه " توليد بستني ماهي به پايان رسيده است و ايران دومين كشور توليد كننده ي بستني ماهي در جهان به شمار مي رود () و اين توليد نه براي صادرات بلكه براي مصرف داخل و بالابردن سرانه ي مصرف ماهي است ." (2 ) اين خبر حتا در اخبار راديو و تلويزيون نيز خوانده شد و موجب مطرح شدن پرسش هاي زيادي در اذهان مردم گرديد . اين مقاله قصد پاسخ گويي به پرسش هاي مطرح شده را ندارد ولي هدف آن روشن كردن اين موضوع مهم است كه آيا مي توان در كشور بستني ماهي توليد كرد و براي افزايش مصرف سرانه ي ماهي آن را به بازارهاي مصرف داخلي ارايه كرد به اين منظور لازم است در ابتدا در مورد بستني و انواع آن تركيبات و روش فرآورش آن نوضيحاتي داده شود.

Fish consumption has undergone major changes in the past four decades. Overall, consumption per person per year has been increasing steadily, from an average 9.9 kg in the 1960s to 16.4 kg in 2005. In the last years, China has accounted for most of the global growth in fish consumption, and the Chinese per capita fish supply was about 26.1 kg in 2005. Fish and seafood consumption varies greatly between different regions of the world, with local averages ranging from 1 kg to more than 100 kg per person per year.
The global increase in fish consumption reflects trends in food consumption in general, with per capita food consumption rising in the last few decades. Still, people in many countries continue to face food shortages and nutrient inadequacies, and major inequalities exist in access to food. Fish contributes to food security in many regions of the world, providing a valuable supplement for diversified and nutritious diets. Many populations depend on it as part of their daily diets.
Aquaculture production is playing an increasing role in meeting the demand for fish and other fishery products. In 2006, it supplied nearly half of all fishery products for human consumption. Further growth in the availability of fish for human consumption is expected to come mainly from aquaculture.
The current trends in fish consumption are expected to continue for the foreseeable future. In developing countries, a shift in diets towards more animal products will increase demand and, in industrialized countries, issues such as food safety and quality, environmental concerns, and animal welfare will probably be more important than price and income changes
